
This Zucchini Noodle with Spinach and Tomatillo Sauce is a super easy meal to make with fresh summer produce.
And, it’s so easy, you can have it ready in about 10 minutes and the entire meal is “raw’.
One of the reasons I love summer produce so much is the abundance of zucchini and tomatillos.
Normally, tomatillo sauces are used with traditional pasta which is not raw and is a high-carb food.
Using raw zucchini noodles makes this a light and clean dish that’s raw, vegan, gluten-free, dairy-free and paleo-friendly.

Ingredients
- 2 organic zucchini
For the sauce
- 4 tomatillos
- 1/2 cup organic raw sunflower seeds
- 1 cup organic spinach
- 1 tablespoon organic lemon juice (freshly squeezed)
- 1 - 2 clove organic garlic (freshly crushed)
- 1 tablespoon organic extra-virgin olive oil
- 1/4 - 1/2 teaspoon Himalayan pink salt
Directions
Step 1 | Prepare the zucchini noodles: Wash the outside of the zucchini and cut off each end. Place it in a Spiralizer (using the blade of your choice) and spiralize your zucchini. Set aside. Add all ingredients to a Vitamix, or other blender, and blend until everything is well combined. Adjust seasonings to your preference. Transfer the zucchini noodles to a medium sized bowl. Pour in the sauce and gently toss until all the noodles are covered. Enjoy! |
