It’s a naturally gluten-free dish since it’s made with spaghetti squash instead of traditional pasta (which you could also use if you didn’t like spaghetti squash or need gluten-free).
The creamy lemon garlic sauce is super easy to make in a matter of minutes with a Vitamix.

Spaghetti Squash with Creamy Lemon Garlic Sauce (Vegan, Gluten-Free, Dairy-Free, Paleo-Friendly)

Ingredients
- 1 organic spaghetti squash (cooked)
For the sauce
- 1 cup organic raw cashews
- 1 cup water (purified / filtered)
- 3 tablespoons organic lemon juice (freshly squeezed)
- 1 tablespoon organic extra-virgin olive oil
- 4 cloves organic garlic (freshly crushed)
- 3/4 teaspoons Himalayan pink salt
Directions
Prepare the spaghetti squash | |
Step 1 | Cook the spaghetti squash: Cut the spaghetti squash in half and remove the seeds by hand. Rub the inside with 1/2 teaspoon olive oil. Bake at 350 degrees for 40 - 45 minutes. Using a fork, scrape out the insides. |
Prepare the sauce | |
Step 2 | Add all ingredients into a Vitamix and blend until creamy and smooth. |
Step 3 | In a medium sized bowl, combine the cooked spaghetti squash and the sauce and stir until it is evenly distributed. Optional: sprinkle with red pepper flakes. Enjoy! |
